Creamy Parmesan Pasta with Crisp Bacon and Peas
Recipe Adapted from: The No Time to Cook Book by Elena Rosemond-Hoerr
Makes: 4 Servings
Prep Time: 15 minutes
Cook and Assemble Time: About 15 minutes
INGREDIENTS
- 10 oz. (285 grams) dried pasta of your choice
- 2 tsp. olive oil
- 2 medium cloves garlic, crushed in a garlic press or minced with a knife
- 4 to 6 slices of cooked crisp bacon (American bacon), chopped
- 1/2 cup cream (15% milk fat)
- 1 tsp. white wine vinegar
- 2 Tbsp. finely grated Parmesan cheese
- 1 cup frozen peas, thawed
- salt and pepper to taste
DIRECTIONS
2. In the same pot heat oil over medium heat. When oil is hot, add garlic and chopped bacon. Cook and stir for 1 minute. Reduce heat to low. Pour in cream, reserved cooking water, vinegar, Parmesan cheese, peas, and cooked pasta. Toss to coat pasta. Lightly season with salt and pepper. Dinner is ready!
