Chow mein noodles only take 3 minutes to prepare, but if you boil them ahead of time, you can be eating your homemade Chinese food in under 10 minutes! Cold pre-cooked noodles also work better when they are fried in the hot skillet. I'm not exactly sure why, but it does make a difference.
And if you find your noodles need more sauce, add more soy sauce or try a few dashes of oyster sauce - makes it extra tasty! Enjoy!
Pan-Seared Shrimp and Vegetable Chow Mein
Makes: 2 Servings
Hands-on Time: 10 minutes
Cook Time: 15 minutes
INGREDIENTS
In a deep skillet or wok, boil chow mein noodles in water until cooked, about 3 minutes. Drain noodles in a strainer and rinse under cold water. Set aside.
In the same skillet or wok, heat 1 teaspoon of oil and butter over medium heat until butter is melted. Add shrimp. Cook and stir shrimp until each piece is fully cooked, about 3 minutes. Remove cooked shrimp from skillet and set aside on a plate.
Add remaining 2 teaspoons of oil to skillet and heat over medium heat. Add onions and bell pepper. Cook and stir until vegetables begin to soften, about 3 minutes. Add garlic and peas. Cook a stir for a minute longer. Finally, add cooked noodles and soy sauce. Cook and stir the mixture for 2 minutes to lightly fry the noodles. Remove skillet from heat. Add cooked shrimp and sesame oil. Toss and serve hot!
