Pina Colada Caramel Smoothie

This recipe was supposed to be posted yesterday.

In fact, it was also supposed to be a Sweet and Sour Pork Stir Fry.

As we all know, things don’t always work out as planned, especially when it comes to cooking.

Although the stir-fry looked awesome (you can see a picture of it on the Cookapalooza facebook page) it was surprisingly bland which was a big let down. It's going back to the kitchen for further tweaking. I’ll post it when I figure out what went wrong.

In the meantime, how about a Pina Colada Caramel Smoothie?

If you’re wondering about the caramel, it’s surprisingly good with the pineapple and coconut!

I added the caramel sauce because I've been adding it to just about anything that resembles a dessert this summer.

I’m not kidding!

If you’re a newsletter subscriber you saw it used as a topping for the Strawberry-Blueberry Napoleons in the last edition. I would have put it on the Frozen Berries with Chocolate Sauce but that would have been overdoing it...maybe.

Now it’s in (and on top of) this Pina Colada Caramel Smoothie!

So how about it…you want one?

Pina Colada Caramel Smoothie

Recipe Inspiration: My mild addiction to coconut and caramel sauce
Make this recipe with LESS effort!
  • Blend all ingredients at once until smooth. 
Time it takes: 10 minutes to prepare
Makes:  1 smoothie

2½ tbsp caramel sauce, divided
1 banana, divided
1 cup frozen pineapple cubes
½ cup pineapple juice
½ cup milk
1 tbsp shredded sweetened coconut

In a blender combine 2 tbsp caramel sauce, 1/2 banana, pineapple cubes and pineapple juice. Blend until smooth and pour into a serving glass. 

In a blender combine milk, shredded coconut and remaining banana. Blend until smooth. Gently pour over pineapple mixture in serving glass. Drizzle remaining caramel on top.

  1. This sounds delicious to me - I'm a big caramel fan! I've had many a recipe that looks so pretty on the plate, but lacks a little something. The great thing about being a cook is we get to try again, right? Have a good week!
