What can I say, even this food blogger (and vlogger) who promotes healthy eating uses the drive-through on occasion.
With that said, I prefer to follow this trio of meal prep steps instead:
Step #1: Mise en Place (fancy French term for gather ingredients): Takes 2 to 3 minutes.
Step #2: Kitchen Yoga (or anything to help de-stress the mind before cooking): 2 minutes.
Step #3: Comfortably Assemble a One-Pan Meal: Preferably in under 20 minutes.
Even when short on time I would rather prepare a quick meal at home because it gives me the opportunity to at least place a healthy side dish (or two) on the plate.
Consider these 5-Ingredient Sloppy Joe Sandwiches
Not the healthiest choice, right?
But when my two kids see this irresistible sandwich on their plate it turns them into Sloppy Joe Zombies!
While in their zombie trance, they couldn't care less about the steamed vegetables I place on their plates. They just gobble up everything in sight.
And, since zombies don't speak, I don't hear complaints about not having pizza delivered.
The moment of silence is like sweet music to my ears (give me a second as I wipe a happy tear from my eye).

5-Ingredient Sloppy Joe Sandwiches
MAKES: 4 sandwiches
PREP TIME: 10 minutes
COOK TIME: 10 minutes
INGREDIENTS
- 1 lb. (16 oz.) extra lean (or lean) ground beef
- 1 can (7.5 oz. / 213 ml) pizza sauce (or use a tomato-based pasta sauce)
- 1 can (4 oz. / 127 ml) chopped green chilies (or use salsa)
- 1 Tbsp. brown sugar
- 2 tsp. Worcestershire sauce
- 4 buns (hamburger or Kaiser buns)
DIRECTIONS
2. Stir in pizza sauce, green chilies, brown sugar and Worcestershire sauce.
3. Spoon an equal amount of meat mixture on each bun. Serve with a side of healthy steamed vegetables.
