In my opinion watermelon is the ultimate summer snack. Slice it, bite in and enjoy its sweet refreshing goodness! How do you improve on that?
I’ve tried watermelon appetizers, watermelon salsas and watermelon slushies but I still prefer to eat a slice of watermelon straight up!
However…I do have soft spot for cubes of watermelon tossed with balsamic vinaigrette. I don’t know what it is but I find the combination of the two incredibly good!
Sometimes I’ll even take it a step further and sprinkle on feta cheese and toss on a few olives. The saltiness from the feta and olives just adds to the party!
- Purchase cubed watermelon from the grocery store (quicker but more expensive to do it this way).
Makes: Single serving
2 cups cubed watermelon
2 tbsp store-bought balsamic vinaigrette (Kraft makes a good one)
2 tbsp crumbled feta cheese
Handful of small olives
In a medium bowl, toss watermelon with vinaigrette.
Sprinkle feta cheese on top. Add olives.

This is the second time I've seen a watermelon salad like this. I have to give this a try. It's so healthy, and what a nice change from the typical fruit salad we see watermelon in.
