Tomato and Cucumber Sandwich with Garlic Butter


This Tomato and Cucumber Sandwich with Garlic Butter builds on one of my favorite summertime sandwiches which is a Toasted Tomato Sandwich made with ripe and juicy locally-grown tomatoes. 

Whenever I make a toasted tomato sandwich I like to add garlic butter using a little trick I've picked up at some point along my many cooking experiences. 

The "trick" is to rub a peeled garlic clove over the rough surface of toasted bread. It leaves behind just enough garlic on the bread to taste but not overpower the entire sandwich. I then spread butter (or margarine) over the bread where I've rubbed the garlic to create instant garlic butter!

Give it a try next time you make a toasted sandwich.

I used the instant garlic butter trick on this sandwich and it saddled up nicely with the sweet red onions, mini cucumber slices and ripe tomato. I also drizzled on Italian salad dressing. You can also go with balsamic vinaigrette or whatever salad dressing you prefer. 

The one drawback to this sandwich is your breath won't smell like roses after eating it (red onions and garlic will do that). Nothing a stick of gum can't cure. Even though this sandwich isn't fresh breath-friendly, I have a feeling my favorite toasted tomato sandwich will be taking a back seat to this one a lot this summer!

Tomato and Cucumber Sandwich with Garlic Butter

Time it takes: 10 minutes
Makes: 1 sandwich

2 slices rye bread
1 clove of garlic, peeled and halved
Butter
1 small leaf Romaine lettuce
1 medium tomato, sliced
1 mini cucumber, sliced
1 slice red onion
Pepper
1 tbsp store bought Italian salad dressing

In a toaster, toast bread. Remove bread from toaster and rub one side of each bread slice with garlic clove. Lightly spread butter or margarine on same side of bread.

Arrange lettuce, tomato, cucumber and red onion on top of one slice of bread, butter side up. Lightly season with pepper and drizzle on salad dressing. Top with other bread slice, butter side down. Serve.
