Roll-up Your Nacho Dip and Survive Your Final Exams

Term papers, assignments and final exams.

I recall a time when I was in that situation. I was really bad for leaving things until the last minute and often found myself in survival mode. I’d start searching for the easiest path to passing my finals. Not a great strategy but it did pay off once.

In my second year some friends and I "happened upon" the final exam to one of our courses. It was from the year before but we learned the professor was lazy (just like us) and didn’t change his exam questions. We all aced it.

I know...I know...that's no way to approach finals.

Although it was the calmest I ever was going into an exam.

Obviously I'm not the best source for proper studying habits. I noticed Isa over at Community College Success is much more knowledgeable than me on this topic and has some smart tips on how to ace your finals.

However this time of year isn't only about studying. It's also about eating right so you don't get sick or cause your brain to go into slow chug mode because you've been surviving on Cheetos, free pizza and candy bars.

A better snack option would be the low-fat Nacho Dip recipe I shared in my last post. The only issue is it's kind of addictive and you might end up wolfing it all down in one sitting.

I was thinking a better option might be to roll-up the dip in flour tortillas. That way you can make a bunch of these Nacho Dip Roll-Ups and store them in your fridge. Eat a whole one when you need a quick bite or slice them into smaller pieces for an easy snack and get on with the important stuff.

Song Suggestions:
Alright I have a couple "survivor" inspired songs here for you. Think of them as confidence boosting music to have playing in the background while making these roll-ups and studying for exams.

"Eye of the Tiger" by Survivor. This is for you Rocky Balboa types or for those who like that music "montage" feel while studying. They played this song in an episode of Big Bang Theory where Sheldon and Raj are trying to figure out an equation. Too funny!

For the strong confident young lady, "Survivor" by Destiny's Child. Imagine you have the confidence of BeyoncĂ© in a music video and nothing can stop you from acing your exams! You go girl!

Nacho Dip Roll-ups
Low-fat nacho dip rolled in a flour tortilla and sliced into individual servings
Makes: 8 to 10 roll-ups that you can eat as is or slice into smaller snacks

Cook Time: nada
Total Time: 15 minutes

1 carton (16 oz / 500 g) low-fat cottage cheese
1 package (8 oz / 250 g) light cream cheese, softened
1 cup (packed) shredded old cheddar cheese (4 oz / 113 g)
¾ cup chunky-style medium salsa

¼ cup chopped green onions
8 to 10 flour tortillas

In a medium bowl, combine cottage cheese and cream cheese. Mix well. Gently stir in cheddar cheese, salsa and green onions.

Lay out tortillas. Spread cheese mixture evenly across each tortilla. Roll up tortillas.

Lightly dampen 8 to 10 sheets of paper towel (depending on how many you make). Wrap each tortilla roll in one. Refrigerate.

Just before serving, remove paper towel and slice into 1-inch pieces.

  1. This looks yummy! Whenever I'm in finals mode, I either eat way too much (cuz of stress and nothing else to look forward to) or I completely neglect eating because I'm too busy. This is a nice idea for a quick snack.
