When dealing with bold southwest flavors, such as the ones found in this side dish, I find it’s best to prepare them while listening to some equally bold music. For this dish I choose the tunes of ZZ Top, to add a dose of spiced-up energy to my southwestern style cooking experience!
The bands rockin’ blues based blend of music revved things up a notch as I embarked on preparing this straight forward no-nonsense side dish. I have to admit that listening to their song "I’m Bad, I’m Nationwide" added some serious attitude to my cooking!

Cajun Cooking to a Retro Beat!
This past Valentine’s Day I was determined to take a break from the kitchen and not cook. Guess what I ended up doing? The cooking bug struck while I was flipping through Chef Olaf Mertens’ cookbook called Olaf’s Kitchen.

Barenaked Broccoli with Cheese
My mom served me broccoli when I was a kid and I became familiar with the music of the Barenaked Ladies when I was in university. I’ve recently introduced my kids to both broccoli and the music of this lively Canadian band at the same time. The band’s songs have been an instant hit with my kids. I wish I could say the same about the broccoli. This got me thinking...is it possible to get my kids as excited about broccoli as they are about Barenaked Ladies’ songs. A tough task, but then again anything is possible.

Cauliflower with Flair
This past Sunday, I found a familiar spot on the couch and watched the Grammy Awards. It’s the only awards show I enjoy. I love watching the various artists perform their songs and the seeing the constrasting personalities of the award winners. On one end of the spectrum you have Bruce Springsteen who has that All-American image. On the other end you have Lady Gaga who wows everyone with her outfits. Pairing the two on stage to do a duet would be a total train wreck. However when it comes to cooking, pairing plain ingredients with those that have visual flair is a sure way to create an exciting dish!
