A Simple Pork Dish to Rejuvenate Your Mind

This grilled fennel and lemon pork is the type of dish that works well for the weeknight rush. It’s quick, straightforward and you’ll notice there are minimal ingredients required. The process is uncomplicated and you can add an element of rejuvenation to the process by including the intriguing music of Simple Minds to your kitchen atmosphere.



Songs such as Love Song, See the Lights and Belfast Child are always welcome in my kitchen and so is pairing a fennel pork dish with applesauce. Fennel, pork and apples are like best friends and they bring together this dishes subtle flavor. The fact that you hardly have to lift a finger to make will send welcoming sensations to your mind!

Grilled Fennel and Lemon Pork

Instruments
8 pork loin centre chops, boneless
2 tbsp olive oil
1 clove garlic minced
1 tbsp freshly grated lemon zest
1 tsp crushed fennel seeds
Salt and freshly ground black pepper

LyricsIn a medium bowl, combine oil, garlic, lemon zest and fennel.

Place pork loin chops on a baking sheet. Season both sides of each pork loin chop with salt and pepper. Rub the oil mixture onto each side of each pork loin chops.

Preheat grill to medium heat. Grill pork until cooked through, about 3 to 4 minutes per side. Place pork on a cooking rack, cover with foil and let sit for 5 minutes. Serve with applesauce!
